Soft Molasses Cookies
Makes 2 dozen cookies
1 cup (2 sticks) butter
1cup brown sugar
1 large egg
1 teaspoon vanilla
¼ cup molasses
2½ cups flour
¼ teaspoon salt
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground nutmeg
½ cup sugar for topping
- In a large mixing bowl, using an electric mixer, combine butter and sugar until light. Beat in egg, vanilla and molasses until well blended.
- In a medium bowl, combine flour, salt, baking soda, cinnamon, ginger, and nutmeg.
- Stir dry mixture into creamed mixture until well blended. Chill dough for 1 to 2 hours, until firm.
- Preheat oven to 350 degrees and grease a cookie sheet.
- Shape dough into small balls, approximately three-quarters to 1 inch in size. Roll balls in sugar and place 2 inches apart on cookie sheet.
- Bake for 8 to 12 minutes, or until well set. Cool on sheet for 2 minutes before moving to wire rack to cool completely.
