Pancakes

Makes 4 servings

1 cup all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
½ teaspoon salt
1 large egg
¾ cup milk
¼ cup butter, melted

1 cup chocolate chips (optional)

 

1. In a small bowl, combine flour, sugar, baking powder, and salt. 

2. In a medium bowl, whisk together egg, milk, and butter. Add dry ingredients and stir until just moistened. If batter seems thick, add a little more milk.

3. Preheat a nonstick frying pan or griddle on medium heat. Once hot, lower heat and wait 2 minutes.

4. Pour batter with a quarter cup measure onto ungreased hot griddle or frying pan. When bubbles form on top, turn pancakes over and cook until second side is golden brown.
