Two cooking options are included for this recipe in an air fryer or traditional oven. The loaf pan size depends on cooking method.
For the air fryer use the baking pan that came with your air fryer. A standard air fryer would have a round or square 5 – 8-inch cake pan, and this recipe will make two loaves. Bake each loaf at 310 degrees for 33 to 37 minutes, or until toothpick test in the middle of the bread is clean. Traditional oven instructions in recipe below.
For the oven – A loaf pan 8½ x 4½ or 9 x 5-inch should be used. Cooking time in recipe below.
No matter how you bake this bread make sure to use ripe bananas – you want bananas with plenty of brown spots all over the bananas. The riper the bananas, the sweeter and more delicious the bread.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 to 4 ripe bananas mashed should be about 1 ¼ cups
- 3/4 cup granulated sugar
- 2 large eggs
- 6 tablespoons unsalted butter melted and cooled
- 1/3 cup sour cream plain or Greek yogurt can be used instead
- 1 teaspoon vanilla extract
- ½ cup – chips (if you like)– chocolate, butterscotch, peanut butter, or walnuts
Instructions
- Preheat oven to 350°F. Spray with nonstick cooking spray or grease and flour the bottom and sides of an 8½ x 4½ or 9 x 5-inch loaf pan. Set aside.
- Whisk together flour, baking soda and salt in a medium bowl.
- Mash bananas in a large bowl using a fork, or a mixer. There can be some small chunks remaining, it doesn’t have to be completely smooth.
- Whisk together sugar, eggs, melted butter, sour cream, and vanilla extract and add to mashed bananas.
- Add flour mixture and stir in gently just until combined. Add in nuts and chips, if you choose. Transfer to the prepared loaf pan and use a spatula to smooth the top.
- Bake for 50 to 60 minutes or until an inserted toothpick comes out clean. If bread starts to get too brown on top, cover with foil for the last 10 minutes.
- Remove from oven and have bread cool on cooling rack in loaf pan for 15 to 20 minutes. Turn pan upside down and carefully remove banana bread. Let bread continue to cool on the rack for another hour or more. Slice and serve plain or add butter.
